Fresh Oysters

(A)Scientific name – Crassostrea gigas

Connemara Seafoods cultivates its own pacific/gigas oysters.  Seed oysters are introduced to the farms during the late spring and are harvested 24 to 30 months later.  The oysters are then ready for  processing, quality control, grading, according to customer specifications and packed for export.
Sizes  - 20 to 120 gms graded to customer specification
Availability – November to March

(B) Scientific name – Ostrea edulis

The Ostrea edilis is known as the European flat oyster or native oyster.  There is a natural production of flat oysters along the West coast of Ireland.  The oysters are fished by dredge from the seabed and then taken directly to our plant at Kilmeena for processing and exporting.
Sizes  - 55 to 150gms graded to customer specification
Availability – November to March

(C) Speciale

Connemara Seafoods also produces the 'speciale' oyster (pacific oyster) which has a very high meat content and is available periodically during November to march season.
